I picked some fresh green broccoli from Mums garden (which I’m currently looking after) and wanted to make something other than a calabrese broccoli with it, so decided on a manly quiche, because real men eat quiche right? Initially I thought of adding all sorts of things in it, but I was persuaded to keep it simple. No Kale, no smoked bacon, no spinach…..just broccoli, egg and feta. But I couldn’t help sneak in some smoked piminton, butter fried leek and grated peccorino.

I’ve always thought that quiche is a bit of a ladies meal….it involves pastry which I fail dismally at. The word quiche invokes a scene of older ladies at a cafe sharing gossip and drinking tea. And besides that I despise any meal that involves me making pastry from scratch. It’s one of my pet hates. Luckily for me Kate knows how to make short crust pastry and whipped me up a batch for my quiche the night before.

She rolled out the pastry and the following day and before long it was ready to use, even though it split on the edges in the freezing conditions. With a little pastry know-how the split edges where fixed, the oven tray was lined and baking ensued. A team effort.

It was a winter triumph! The Brady bunch troop was feed and we even had left overs.

In cooking and in life I find that simple and less complicated is the best approach….but next time I make this quiche, smoked bacon WILL be added. ;-)
