What a breakfast!
Smoked trout rosti kinda arrangement with some broad bean leaf to make me feel less guilty about the frying part.
Some baby spinach and a poached egg completed the brekkie along with a dollop of my kasundi relish from last summer.
There are subtle hints of spring. There still isn’t a great deal of activity in the veg patch, but at least the leafy greens are growing and even though I don’t have actual broad beans yet, the leaves taste just like beans and give a meal like this a nice freshness, like tasting the onset of spring really.
Looks like we’re in for a healthy crop of green sprouting broccoli in a month or so too! Broccoli is a late winter/early spring delight. And it’s worth the wait all year until it’s in season. That’s one of the rewarding things about eating as the seasons dictate. You really appreciate it when a particular type of food is in season, or when it’s open hunting season or when it’s growing in the wild and free to plunder. Soon we’ll be munching on our fresh tommies for breakfast each morning, grilling zucchini and eggplant, and devouring fresh peas and beans.
Never feel guilty for frying
I am trying to recall what Michael Pollan said – words to the effect of – “eat as much take away food as you like as long as you make it yourself” I think that would count for frying too.
There should be no guilt associated with frying. Just keep it in balance and it is an occasional, pure, pleasure. I say this as a guy who has muesli, natural yoghurt and fruit for breakfast most days….

It’s pretty simple….par boild spuds, grated and mixed with a few eggs, chopped brad bean leaves and a hand full of diced smoked trout. Hand form into paddies and fry.

Thank you! By the way, if you fry in coconut oil, it is actually healthy. I know coconut oil comes from overseas, but the health benefits are worth it.
Bring on the broccoli! I’m still waiting for my ‘Purple Sprouting’ to get going, but we have been picking a few small heads of the green stuff. Such a great vegie.
I’m shattered I missed planting the purple this year…..missed it by a few months. Next season…..and they will taste extra delicious I’m positive of that.

Well to be honest I’ve never had a problem with insects eating the broc before I do. I plant sprouting varieties instead of the commercial variety as they continue to grow new florets after you cut the first round down. What variety are you growing and what bugs are eating it?
