We’ve been growing a heap of borlotti and cannelloni beans this summer. And we’ve grown them not to eat fresh but to build up the dried beans stores for the coming winter. They idea is to grow them as normal veg but leave the beans in the pod until the plant looks like its on it’s way out and the pod has dried out. If the beans rattle in the dried pod then it’s a good time to harvest as the beans have shrunk as they’ve dried. When needed for cooking all they require is an overnight soaking in water and then boiled for about an hour. Great for stews, soups and my favourite, breakfast beans with winter kale/spinach and chorizo.
