I think there might be some people that hear eel in a dish and cringe, which is a pity. Ask most people if they like asparagus and you’ll generally get a positive response, the same can be said about smoked Salmon and Trout. But mention Eel and appetites suddenly diminish. Trust me when I tell you that Eel is a beautiful fish, and smoking it brings out all it’s subtle nuances, as the smoking process does with Trout and Salmon.

So you’ve probably eaten a dish with asparagus and smoked salmon…..why not try it with eel?
