My family eat rabbit, pheasant, hare etc on a weekly basis. I try to buy only locally grown veg and forage for what I can through the seasons. I would be really grateful for any new recipes that you have-well done and I watch with interest!
Hare is a beautiful regal meat isn’t it! Hare cooked in a red wine ragu in a targine for a few hours is very delis!
i make a beautiful traditional Jugged Hare recipe that I found in an ancient cookbook. My whole family absolutely love it! You are right, its taste and texture is something a little bit special.

I’m just about to watch this episode but watched the broccoli orchietto episode on the weekend. You’ve really made my family sit up and go “hmmmm”. We are planning the design of our backyard and have just made the massive shift to a fully productive planting, rather than a bit of a vegie patch and the rest decorative. Thanks for shifting our thinking and providing us with so much inspiration for the fruits (and vegies) of our labours.

Yaaaarm. Going to have to try this. Great video, can’t wait to watch more! My boyfriend loves rocket, but I’ve never been much of a fan – maybe this will turn me. I’ve just discovered that I have leek scapes growing in my garden (I just moved into a new house and found them and it took me an embarrassing amount of time to find out what they were) – I’m not really sure what to do with them! Any suggestions? :) Love your work mate!
Thanks Bianca! It’s an interesting way to eat rocket but it works very well. With the leeks…..a few soups, maybe one with new season potato or pumpkin? Or even a risotto with rabbit or chicken…..in fact leek and prawn!
agreed, potato and leek soup. thats the go.

come to think of it, leeks in quiches are yummy too.

That was great! I never know what to do with the arugula (rocket) I get from my neighbors and in the CSA box. Now I do. I wonder if walnuts would be a good substitute for the pine nuts?
