Most of the day has been spent on the couch with ‘man flu’ and not having much of an appetite. That is until dinner time when Kim made this little gem from the last handful of golden zucchini in the front garden. The recipe was passed onto us from our lovely friend Emma, who has become like an aunty to our girls, thus the dish will forever be called aunty Em’s zucchini soup. It’s such an easy dish to make, and a beautiful Autumn feed as was proof tonight. The key is fresh ingredients, especially the herbs and obviously the zucc’s. Served with a dollop of light sour cream, garlic chives, toasted panna di casa and voilà!
Now back to the couch with man flu.
